Jenny Agutter looks terrific in this episode; she is so glamorous as Margo, the wife of the First Secretary of the American Embassy in Washington, D.C.
It’s a long way from how I remember her in one of my childhood favourite films, The Railway Children.
If you have friends around for dinner, you can practice her cut-glass English accent when asking, “Is anyone hungry?” When they say yes, announce, “I’ll summon up the servants and see if we can whip up something.”
Her husband reminds her that he has had to section off part of the embassy, so the servants are unavailable. She rises to the occasion, “Then I’ll just find my way about the kitchen on my own. Sorry if it turns into potluck, but I’ve been here since only this morning, and I don’t know my way about.”
Jessica jumps up and offers to help.
I am sure she would feel quite at home rustling the pots and pans in an American embassy kitchen!
I’m not sure you should risk wearing a white evening gown when concocting Jenny’s courgette and tomato dish, but maybe you could slip into one to serve it?
Jenny Agutter’s Courgette and Tomato Bake
1-2 tablespoons of oil
1 pound courgettes, sliced
14 oz tinned tomatoes
Chopped basil, thyme or marjoram
A sliver of lemon peel
Salt and pepper
8 oz uncooked macaroni
2 eggs
¼ pint plain yoghurt
3 oz grated cheddar cheese, divided use
Preheat oven to 345℉.
Heat the oil and fry the courgettes until they are lightly coloured. Remove from the pan and reserve. Fry the onions until golden/transparent.
Add the tomatoes, herbs, lemon peel, salt and pepper. Simmer for ten minutes, breaking up the tomatoes and stirring from time to time.
Cook the macaroni as directed on the packet and drain well. Put the macaroni in an ovenproof dish and pour the sauce over, mixing it into the macaroni. Lay the cooked courgettes on top. Mix the eggs, yoghurt and half the cheese and pour over the courgettes.
Sprinkle the remaining cheese on top and bake for 30 minutes.
Serves 6
